chana  Masala:  
Required: chick peas  250 gm, oil/ghee 4 tbsp, mangal chana masala 4 tbsp, medium size onions 2 -chopped
Method: soak chick peas for 4 hrs preferably overnight, cook and keep them aside. heat ghee/oil in a deep pan. fry onions till they turn light brown, add mangal chana masala and salt to taste. add cooked peas and simmer for a few minutes. serve hot with freshly chopped coriander leaves, tomato &lemon slices. 
for pneer chole add 100 gmof cottage cheese.
Ingredients
coriander, cumin, red chilies, pomegranate seeds, mango powder, big cardamom,  black pepper, cinnamon, cloves,  bay leaves, salt.

rajmah Masala:
Required: red kidney beans 200 gms, oil/ghee 4tbs, mangal rajmah masala 4 tbs, medium size onions 2 - chopped.

pav bhaji masala
Required: potatoes 500 gm, cauliflower 100 gm, capsicum 50 gm, tomato 100 gm, green peas 100 gm, onion 50 gm - chopped, garlic paste 2 tbsp, ginger paste 1 tbsp, chilly powder 1 tbsp for extra spicy pav bhaji.  
Method: boil all the vegetables, heat butter on a pan, and mash all the boiled vegetables. add onoins, capsicum. ginger and garlic paste. saute for a few minutes and  add  4 tbsp of mangal pav bhaji masala with a little water and mash the vegetables. serve hot garnished with freshly chopped coriander leaves and buttered bread rolls. 
Ingredients: red chillies, coriander, cumin, cassia, ginger, cloves, black pepper, by leaves, shahjeera, mango powder, badyan, asafoetida & salt.

chat Masala:  
Method: this spicy chat masala is a blend of a variety of spices. just sprinkle it on dahi wada, raita, panpuri, aloo chat, bhel puri, dahi puri, salads, fruits, chutneys, boiled vegetables, egg preparations, and a variety of other dishes for that lip smacking chatpatta taste.
Ingredients: black salt, pomegranate seeds, cumin, mint, mace, citric acid, ginger, chillies, asafoetida & salt.

pani puri  Masala:  
Required: 50 pani puris, boiled potatoes 250 gm, sprouted whole moong 100 gm, mangal panipuri masala , dates & tomato chutney.
Method: add required quantity of mangal panipuri masala in cold water. add green leaves and chopped mint leaves  ( optional), serve puris filled  with spiced liquid, cooked sprouted moong, boiled potato, date & tamarind chutney.
 
Ingredients: coriander, dry mango powder (optional), chillies, black salt, cumin, mint leaves, ajwain, asafoetida, black pepper, dry ginger & salt.

bhel puri chutney powder:
METHOD: mangal bhelpuri chutney powder is sweet- sour- hot in taste. take required quantity of powder. add jaggery and water. mix it well and use it after 20 minutes. ready tasty chutney for bhel puri, sev puri, dry bhel, dahi batata puri, kachori, ragda pattice.
Ingredients:
green chillies, mango powder, coriander leaves, mint leaves, cumin, sugar, tamarind & salt.
